Cucumber + Basil Salad

Well here I am with another cucumber recipe. Our garden is producing more than I’m used to having  so I’ve been exploring different cucumber salads lately. It’s been very hot here in Portland, on and off with extreme heat, we’ve been in triple-digit territory the past couple of days so a cool cucumber salad fits quite well, and cucumbers, basil and lemon are a great flavor combination. And let’s not forget a cucumber vodka cocktail! I’m happy to say the whole salad was grown from our garden, even the tiny red pepper, we get about one ripe per week, hoping it will produce more soon!

Cucumber + Basil Salad

  • 3 cups of chopped cucumber
  • 1/2 cup chopped basil
  • 1/2 cup diced pepper and/or sliced cherry tomatoes
  • 1/2 lemon, juiced
  • 1/4 cup olive oil

Remove the seeds from the cucumber and chop into 1/2” pieces. 

In a large bowl add the cucumber, basil, peppers and tomatoes. In a small bowl whisk together the lemon juice and olive oil, then lightly toss together. Salt and pepper to taste. Can be made ahead and refrigerated.
