Peachy Green Smoothie
/Well I can't believe it's taken me all these months to post a smoothie! We have smoothies pretty much every morning. Usually it's some combination of spinach, kale, frozen berries and bananas. And depending on the combination of fruit and vegetable, the colors will range from green to purple to a purple brown to brown. Color theory 101: green (spinach) and red (strawberries) creates brown (smoothie). So something to think about if you want your smoothie to have a nice color to it, and that shouldn't matter, but then we do eat with our eyes first. I use a Vitamix blender, and let me tell you this thing is amazing, it's replaced my food processor on pretty much every occasion it's needed, you can make peanut butter, butter, almond flour, not to mention soups, dressing, sauces, it's just a really powerful kitchen accessory. The recipe came from the Create recipe book which came with the blender. There's quite a bit in there and I'll be posting more recipes from the book, but I chose this one because I really wanted to use up the last of the peaches while they're still good. If you're not a big soy fan you can always swap out with yogurt or leave it out altogether.
Photo notes: I always find photographing beverages challenging, which is one of the reasons I've shied away from posting them a bit, for one you're dealing with a lot of reflection and glare, and I also don't have the best props for glassware, I mean we have some nice glasses but it seems anything that's made it's way into the dishwasher gets ruined a little bit, so I have some glasses I only wash by hand, but this pint glass has survived the dishwasher quite well, the cost of glass does not always equal quality, we have some pricey crate and barrel glasses that look just awful now and they were supposed to be good quality glass. But I'm still learning about all these things, I welcome any comments on glassware if you've found a brand or kind of glass that holds up well to everyday use. We don't have the sort of space where I can store tons of props, so what you see in these photos are things we actually use. That said I'm always seeking props that are functional, durable and attractive!

Peachy Green Smoothie
(adapted from Vitamix Create Recipes)
- 1 cup soy milk
- 2 cups fresh spinach, washed
- 1 banana, sliced
- 2 cups fresh peaches, pitted and cut into chunks
- 1 cup ice cubes
In a Vitamix container place all the ingredients in the order listed and secure lid.
Selct variable 1
Turn machine on and quickly increase speed to variable 10, then to high.
Blend for 45 seconds or until desired consistency is reached.
Yields 4 cups (two 16 oz glasses)
